Recipe of the Month - Kesar Yoghurt Chicken

Kesar Yoghurt Chicken

Serves: 4
Ingredients
1 kg chicken pieces
1 cup yoghurt
1 gm saffron (kesar)
2 large onions, chopped
½ cup oil
Salt to taste
Grind to paste
6 Kashmiri chillies, deseeded
1 star anise
5 black peppercorns
3 cardamom pods (elaichi)
½ inch long piece of cinnamon (daalchini)
1 tsp shahjeera (black cumin seeds)
2 inch piece of ginger (adrak)
10-15 almonds (baadaam)
20 gms raisins (kishmish)
½ cup chopped fresh coriander (dhaniya)
Method
In a large pan, heat the oil and fry the onions till golden brown. Add the ground spices and cook for 5 minutes. Add the chicken and brown the pieces well and then add yoghurt and allow it to mix well with the chicken pieces and the spices. Add 2 cups of water and simmer till the chicken is cooked. Season with salt and remove from heat. Fold through the fresh coriander.
Serve with rice or Indian bread.
